Finnish-inspired creamy garlic potatoes with a grilled red deer patty and first summer cucumbers.
Made from homegrown vegetables and locally hunted meat, this dish combines rich, comforting flavors with the authentic taste of wild game.
Recipe - Creamy garlic potatoes
Ingredients:
- 0,5 kg white potatoes
- 3 cloves of chopped garlic
- 1 tablespoon butter
- 250 ml heavy cream
- salt and pepper to taste
- 2 tablespoon chopped parsley (optional)
Preparation:
Cook the potatoes – wash, peel and dice the potatoes. Add water to the medium saucepan and start heating it up, add a nice pinch of salt. Boil them until you can pierce them with a fork. It should take 15 to 20 minutes. Drain when cooked.
Make creamy garlic sauce – meanwhile the potatoes are cooking chop the garlic and parsley. Add butter to an empty saucepan, allow it to melt and then add chopped garlic. Cook for 3 minutes until garlic is golden and flavorful. Add the heavy cream. Season with a bit of salt and pepper and cook it for few more minutes till it is thickened.
Assemble – add drained potatoes to the cream sauce. Add chopped parsley and mix well.
Recipe - Grilled red deer patty
Ingredients:
- 0,5 kg of minced roe deer meat (can be also wild boar etc…)
- onion
- salt, pepper, garlic
Preparation:
- slice and chop the onion and add it to the meat
- add finely chopped garlic and pepper to the meat, mix well
- form 4 patties
- cook the patties on charcoal or gas grill, arround 5 min (you can also heat a bit of oil in the pan, put the patties on the hot oil and let them be for 5 min)
- sprinkle some salt on top
- turn the patties and fry them for another 5 minutes
Assemble all together with some fresh vegetables, like cucumbers, lettuce, carrots….
